The highest expression of Trompia Valley dairy production, Nostrano Valtrompia DOP is one of the most well-known typical products of the Brescia valleys.

It is a very tasty hard cheese, aged for at least 12 months, and made from the milk of brown cows found in the mountain areas of the territory of Trompia Valley, milked by hand or mechanically every 10-12 hours.

Nostrano Valtrompia is used to make the filling for casoncelli , as a garnish for fresh or au gratin pasta and as an accompaniment to other ingredients, for example in the recipe for ‘carpaccio del malghese’. Some pizzerias in Trompia Valley also offer pizza with Nostrano Valtrompia .
